Everyone wonders what they want to achieve in life, what they want to do, and what passion they have.

This goal is what we strive for, during our lifetimes, and 30 years ago... I stumbled upon an opportunity that led me to understand who I am and what is my true passion.

Since then, I’ve been picking and roasting coffee for more than 10,000 days of my life. Along the way, many farmers and workers were willing to help me hone the skill of picking the finest coffee beans.

Day after day in the coffee industry, it has become my duty to deliver the best coffee beans to all you coffee lovers!

I also had chances to work with some of the world coffee brands, being with them on the work of selection of many amazing coffee beans manually. With all those supply they’ve created many remarkable and impressive coffee drinks to people, from continent to continent!

Having had nearly 30 years of experience in the coffee beans business, especially in Vietnam, the World’s Second largest Coffee producer. It has been a very interesting journey pursuing a passion of his life, Hiep Pham will bring a unique taste to all of the coffee lovers in PEI and Canada!

New Way of Making Coffee

using a filter

The phin consists of a round perforated plate, that fits over a coffee mug or cup; a brewing chamber, that sits on top of the plate; a perforated insert that fits inside the chamber, to tamp the grounds down; and a cap to keep the heat in.

Once the coffee grinds (about the size of table salt) are added to the chamber, the filter insert is twisted down, packing in the good stuff.

Then the water is poured on top; after 60 seconds of blooming, more hot water is added. The cap helps retain the heat as the first drips descend, either into an empty cup or onto a generous spoonful of thick condensed milk.

It takes several minutes of dripping to yield a full cup. Once it does, stir and enjoy hot, or pour over ice.

When using a single serving size (4 ounces) like ours here, start with these guidelines:

  • a. Use 2 tablespoons of ground coffee
  • b. Drop the filter press on top of the coffee
  • c. Place the plate and chamber (filled with coffee) on top of a cup
  • d. Boil water 195-200 degrees F
  • e. Add 0.8 ounces (or cover the filter press by ½ inch) of hot water
  • f. Let bloom for 30 seconds
  • g. Then fill water to the top of the phin (total of 4 ounces)

First drip should happen before 2 minutes

Last drip should be around 5 minutes

If you can adjust the grind size to achieve the flow of first drip by 2 minutes,
and last drip by 5 minutes, then you’ve got a solid brew.
